Chemical Formula: NH₄HCO₃
Properties: White crystalline powder with slight ammonia odor, highly soluble in water. Decomposes rapidly above 36°C into ammonia, carbon dioxide and water.
Functions:
Leavening Agent: Releases gas during baking to create porous structure (ideal for low-moisture products like cookies)
Acidity Regulator: Neutralizes excessive acidity in flour-based products
